An easy and tasty dish by Izabael.
Ingredients:
2 skinless boneless chicken breasts
1 handful of cashew nuts
1 cup of sliced mushrooms
1 yellow bell pepper
1 red bell pepper
1 half of a red union
Ready-to-eat hummus
Jasmine rice pilaf (any flavor)
Heat the pan on a medium flame and add olive oil. Cube the breast and slice the vegetables. Add that in and cook for 20 minutes.
Add water to a pot with some olive oil heat until boil. Then add the rice. Reduce heat to low and cook for 30 minutes, stirring occasionally.
When that has finished heat with olive oil or roasted sesame oil, add the cashews, and then cook for 3 minutes on a medium flame.
Add the mushrooms and cook for 7 minutes.
Organize your plate; Place the rice first, then the chicken, and then the hummus. On top, add the mushroom/cashews.
You could also put it on tortillas and then you would have Mediterranean Fajitas.
